Roasted Potatoes with Vegetables

 Roasted  Potatoes with Vegetables

Ingredients
1 pound potatoes ( chopped, cubes )
½ cup carrot ( chopped, cubes )
½ cup onion ( chopped, cubes )
½ cup green pepper ( chopped, cubes )
1 teaspoon garlic ( finely chopped )
1 tablespoon vegetable oil
to taste salt, paprika and pepper
1 tablespoon parsley ( finely chopped )

Directions



 Mix to bowl potatoes, onions, carrot, green peppers, and garlic. Add vegetable oil, salt, and pepper parsley to bowl. Mix well. Cover bowl and refrigerate for 15 minutes. Preheat oven to 350 degrees F. Spread potato mixture evenly on a cookie sheet. Bake for about 35 minutes. Serve hot. Bon Appetite.
