Tuna Steak

Tuna Steak


Ingredients:

1    pound    white tuna ( tuna steak ) 
1    tablespoon  thyme ( fresh chopped ) 
2    tablespoon    olive oil 
1    teaspoon    ginger root ( grated ) 
1    tablespoon    lime juice 
1/4    cup    avocado oil 
2    clove(s)    garlic ( chopped ) 
1    onion ( chopped ) 
5    cups    summer squash ( any squash will do, cut into bite sizes ) 
1    tomato ( diced ) 
1/4    cup    basil ( fresh, chopped ) 
   to taste    salt and pepper 

Dressing


In a bowl, combine the thyme, olive oil, ginger root, lime juice, and dashes of pepper and salt. Whisk to mix well. Coat the tuna steak with this mixture and keep in the refrigerator for 15 minutes.
In a skillet, heat the avocado oil over medium heat. Add the garlic; sauté for a couple of seconds before adding the onions. Sauté for a couple of seconds . Add the squash cubes and stir-fry for 5 minutes. Stir in the chopped tomatoes. Cover the pan and simmer for 5 minutes. Stir in the diced tomatoes and basil. Stir. Cover the pan to keep warm.
Heat up your grill to high. Place the tuna steak and grill for 5 minutes per side. To serve, scoop  your squash tomato basil sauté on a serving platter and place the grilled tuna steak on top of the mound of sautéed vegetables. Bon appetite.
