Roll of Vegetables of Rice papers


Ingredients

2 oz. rice noodles

8 rice papers
2 tbsp. fresh basil, chopped
½ cup carrots, julienned
2 lettuce leaves, chopped:
¼ cup water
2 tbsp. lemon juice
1 garlic clove, minced
1 tsp. Stevia
½ tsp. chili garlic sauce
Salt to taste

Directions

Mix ¼ cup water 2 tbsp. lemon juice 1 garlic clove, minced 1 tsp. Stevia ½ tsp. chili garlic sauce Salt to taste of the dipping sauce in a small bowl and set aside.
Boil 2 cups of water in a small stockpot. Turn the heat off and stir in the fresh rice noodles. Let steep for 5 minutes. Drain and set aside.
In a shallow bowl filled with warm water, dip each rice paper for 3 seconds. Transfer the rice paper to a wooden work board. Start layering all the ingredients by small portions at one side of the wrapper. Gently lift the uncovered portion of the rice paper over the layers. Fold the sides as in enveloping fashion and roll tightly. Repeat the process.  Serve with the prepared dipping sauce. Bon appetite.
