Chicken in Soya Sauce with Vegetables

Chicken in Soya Sauce with Vegetables
 Ingredients:
 4 medium chicken breast halves ( peeled, cut )
1 tablespoon olive oil
2 zucchini ( unpeeled, thinly sliced )
1 small eggplant ( peeled, cut cubes )
1 medium onion ( thinly sliced )
1 medium reen pepper ( cut cubes )
½ pound fresh mushrooms ( sliced )
½ pound green beans (frozen or fresh ( clean and trim ))
16-ounce tomatoes ( cut )
1 clove garlic ( minced )
1½ teaspoons dried basil
1 tablespoon fresh parsley ( minced )
to taste soya sauce
Dressing


 Heat oil in  skillet non-stick . Add chicken and sauté until lightly browned. Add zucchini, eggplant, onion, green pepper, green beans, and mushrooms. Cook about 20 minutes, stirring occasionally. Add tomatoes, garlic, basil, parsley and pepper. Stir and continue cooking  until chicken is tender.

 Serves 8
