 RIB EYE WITH STEAMED BROCCOLI


1 tbsp. rice vinegar
1    pound    beef, rib eye steak  
1    teaspoon    olive oil
1    tablespoon    rice vinegar
2    cups    broccoli florets ( steamed )
to taste    salt & pepper

Dressing

Rub the rib eye steak with olive oil. Sprinkle some sea salt and coarsely ground peppercorns. Set aside and let stand for 30 minutes. Meanwhile, place the broccoli florets in your steamer and cook for 15 minutes. When done, transfer the steamed broccoli to an ice-cold water bath. Let the vegetables sit for a minute and drain.
Preheat your grill to high. When high heat is obtained, place the rib eye steak over the grill. Cook each side for 2 to 3 minutes, depending on your doneness preference. When done, put the steak on a warm plate. Let it rest for about 5 minutes. The natural juices will seep out; transfer the juices to a small pan and heat together with the rice vinegar. After 10 seconds, turn the heat off and pour the caramelized juices onto the rib eye steak. Serve immediately  alongside broccoli and My Favourite Sauce.
