Sote Aubergine

Sote Aubergine 



Ingredients

3 tbsp. olive oil
3 garlic cloves, minced
1 Onion, chopped
1 Carrot  sliced
1 Bulgarian pepper  sliced
1 Tomatoes  sliced
1 tsp. oregano powder
1 Aubergine , sliced
2 cups spinach
Pepper and salt to taste


Directions

Heat a skillet with the olive oil over high heat. Add the garlic carrots and onion; sauté for a minute.  Stir in the oregano powder and the aubergines and continue sautéing for 2 minutes. Add  Bulgarian pepper tomato stir.  Add half a cup of water and cover. Let simmer over reduced heat for about 10 minutes. Stir in the spinach; sauté for 2 minutes more. Season with pepper and salt to taste ; turn the heat off and cover the pan. Bon appetite.
