Aubergine with Seitan

Aubergine  with Seitan
Ingredients:
3 tbsp. olive oil
3 garlic cloves, minced
1 onion, chopped
1 lb. seitan, cut to bite-sized pieces
1 tsp. oregano powder
1 aubergine , sliced
2 cups spinach
Pepper and salt to taste
Dressing

Heat a skillet with the olive oil over high heat. Add the garlic and onion; sauté for a minute. Stir in the seitan and continue sautéing for 2 minutes. Stir in the oregano powder and the aubergines. Add half a cup of water and cover. Let simmer over reduced heat for about 10 minutes. Stir in the spinach; sauté for 2 minutes more. Season with pepper and salt to taste ; turn the heat off and cover the pan. Bon appetite.
