Salmon Steak

SALMON STEAK


Ingredients:
2 lbs. salmon steak
1 tbsp. juice of grated ginger root
1 tbsp. ghee
 ¼ cup extra virgin olive oil
 ½ cup fresh orange juice
Juice of 1 lemon
1 garlic clove peeled and chopped
1 cup onions, quartered
1 lb. potatoes cut to strips
1 lb. Brussels sprouts
1 tbsp. fish sauce
2 tbsp. rice wine vinegar
Stevia to taste
Pepper and sea salt to taste
Dressing
In a small bowl, combine the juice of 1 lemon and grated ginger root. Sprinkle salmon with pepper and salt. Rub the lemon gingerroot mixture on both sides of the tuna steak. Heat ghee in a nonstick skillet, and sear the tuna on both sides, 3 to 4 minutes per side. Remove from heat and transfer to a warm serving platter.
Add the olive oil to the same skillet. Sauté the onions and garlic for about 3 minutes. Stir in the potato strips; sauté for about 5 minute; remove from heat and set aside. Add the Brussels sprouts. Sauté for a couple of minutes before adding the orange juice, rice wine vinegar, and stevia and fish sauce. Push the sprouts to 1 side of the pan. Return the potatoes to the pan. Cover the pan and simmer for 15 minutes. Turn the heat off and transfer the vegetables to the warm serving platter with the salmon steak. Pour the pan drippings over the salmon steak and vegetables.  Bon appetite.
