CHICKEN WITH LEMON

CHICKEN WITH LEMON


Ingredients

3 tbsp. lemon juice
Pepper and salt to taste
1 tbsp. olive oil
1 lb. chicken breast, cubed
½ cup water
1 onion, sliced
1 tbsp. garlic, minced
1 cup zucchini slices
2 cups snow peas
1 tsp. lemon zest


Directions

In a bowl, whisk together the lemon juice, pepper and salt; add the chicken cubes to coat with the mixture. Put a wok over high heat and add the olive oil. Stir in the chicken cubes and fry until pink color disappears. Add the water and let boil for a couple of minutes. Reduce the heat, cover the wok, and simmer for 10 minutes. Raise the heat and stir in the onion and garlic. Stir-fry for a minute before adding the zucchini and snow peas. Continue stir-frying for about 5 minutes more. Turn the heat off and sprinkle the lemon zest.
